In a large cast-iron skillet over medium-high heat, sauté shrimp, mushrooms and seasonings in butter for 3 to 5 minutes. Stir in fettuccine, Parmesan cheese, milk and sour cream. Cook over medium heat until warmed; do not boil. Garnish with parsley.

Skillet Goulash

I like to serve up this old-fashioned family favorite with thick slices of freshly baked sweet cornbread topped with pats of butter.

Makes 8 to 10 servings

2 lbs. ground beef

10-oz. can diced tomatoes with green chiles

14-1/2 oz. can stewed tomatoes

6 baking potatoes, peeled and diced

15-oz. can tomato sauce

15-1/2 oz. can corn, drained

14-1/2 oz. can ranch-style beans

salt and pepper to taste

Garnish: shredded cheese
